I baked up two 8″ round chocolate cake layers, using a devil’s food cake mix. Back in April I made a homemade ice cream cake on my instagram stories for my son’s birthday. He is not a fan of lots of cake or frosting, but also loves ice cream, so an ice cream cake is the obvious solution. Instead of spending loads of money on a Dairy Queen cake, I opted to make my own and it was a roaring success. Vanilla Ice Cream is absolutely one of my “pig out” foods.
After processing, put the ice cream into a bowl or other container, seal, and place in the freezer for several hours to allow the ice cream to get firmer. The only hard part about this recipe is remembering to freeze the ice cream container before you churn the ice cream! The container needs to be very cold for the ice cream to churn properly, so before you do anything make sure to pop it in the freezer first! The flavor of this runny pudding , lol, is good, but it’s definitely not what I was going for. I wish I was able to post a pic of what it looked like. I’m not going to rate this yet because technically I haven’t made it yet. My son loves vanilla ice cream but I’m looking for a healthier version. Personally, I think the coconut and vanilla flavors look delicious, so even if he doesn’t take to it (he is a fussy eater!) I’ll be enjoying it.

Vanilla Ice Cream With Warm Chocolate Sauce
I went to buy more coconut cream to try this again (incidentally my store only carries 5.4oz tiny cans of the unsweetened coconut cream) and they were out. It seemed to blend smoother once chilled — however fat doesn’t melt until warm so i thought i’d start there. Unfortunately when I blended the ingredients it split into liquid with a ball of coconut fat in the middle. the bad thing is after a night in the freezer it’s rock hard! and never will be like it was when it was freshly made. I, too, am tired of spending almost $10 on vegan ice cream.

Add the coconut to a medium sized heavy saucepan Ice Cream Cake Maker and set over medium-high heat. Stir the coconut until it begins to brown, about 7 minutes, but do not allow to burn. Add the half and half, heavy cream, coconut milk, and coconut cream and bring to a simmer. You want to scald the mixture without it coming to a boil.
